INGREDIENTS: 
220g Favols' onion confit
2 red peppers
2 eggplants
Extra virgin olive oil, thyme, herbs of Provence, salt & pepper
   
DIRECTIONS: 
Spread Favols' onion confit in a Pyrex dish preferably
Cut eggplants into medium slices & red peppers into large strips
Alternate the eggplants & red peppers on the bed of onion confit
Add extra olive oil, herbs of Provence, thyme, salt & pepper
Bake in the oven 200° for about 25 mn
Every 10 - 15 min during cooking, press  the veggies in the dish with back of a spoon
